How To Ensure Maharashtrian Chana Koliwada Turns Out Crispy?

The crispy texture of Chana Koliwada is what makes it so loved. To achieve this, make sure to fry the chana in batches, as overcrowding in the kadhai can lead to uneven cooking. Also, don't forget to transfer them to a plate lined with tissue to absorb excess oil, or else they'll become soggy quickly.

Boil overnight-soaked chickpeas for 1 to 2 whistles, then strain them. Take a bowl and add mustard oil, turmeric powder, cumin powder, coriander powder, red chilli powder, ginger-garlic paste, and salt. Add some water to form a smooth paste. Next, add the boiled chickpeas along with besan and cornflour, ensuring they are well-coated. Now, heat oil in a kadhai set on a low-medium flame. Add the marinated chickpeas to the oil and deep-fry them until they turn crispy. Do not forget to add garlic cloves as they fry. Once done, transfer to a plate lined with tissue paper. Sprinkle chaat masala on top and enjoy!
